Lemon pepper cauliflower wings
A fresh take on the buffalo style cauliflower wings that have taken the internet by storm!
These lemon pepper cauliflower wings are vegan and are baked with a crispy breadcrumb coating and then coated in a slightly sweet and spicy lemon pepper sauce.
Every part of these lemon pepper wings is homemade but you could cut a corner here by using a shop-bought lemon pepper seasoning to save on time.
Ingredients:
For the batter:
1 cup plain flour
1 cup milk (I used oat)
1tsp paprika
A generous pinch of black pepper
Salt to taste
Zest of 1/2 lemon
1tsp dried mixed herbs
1/2 tsp garlic powder
1 cauliflower
For the crispy coating:
1/2 cup fine breadcrumbs
1/2 tsp lemon zest
1/2 tsp paprika
1/2 tsp black pepper
For the saucy coating:
2tbsp olive oil
50ml water
A little flour to create a slurry
Pinch of black pepper, garlic powder, herbs and paprika
Juice of 1/2 lemon
Method:
Preheat your oven to 220 degrees celcius (fan).
Mix the batter ingredients together and coat your raw cauliflower florets in it.
Roll the florets in the breadcrumbs and place onto a lined backing tray for 15 minutes.
Combine the sauce ingredients in a pan and bring to a simmer until thick and glossy.
Coat the crispy cauliflower wings in the sauce and place back into the oven for 5 minutes.
Serve with fresh parsley and a wedge of lemon!
