Herby Asian salmon skewers

These Asian salmon skewers with soy, garlic, chilli and coriander are so quick and easy to make but look quite impressive and are great just served with rice and some garlic stir-fried greens if that’s your thing!

The spring onions, coriander and lemon make these quick Asian salmon skewers really fresh and zesty. They’re really healthy, delicious and are one of my favourite quick weeknight dinners.

Ingredients (makes 2 skewers):

  • 2 salmon fillets (250g)

  • 2tbsp soy sauce

  • 2 finely chopped spring onions

  • 1/2 red chilli finely chopped

  • juice of 1/2 lemon

  • 2 garlic cloves (minced)

  • 1tsp sugar

  • handful of fresh coriander and parsley

Method:

  1. Preheat the oven to 200 degrees c (fan)

  2. Cube the salmon and place into a bowl with all of the other ingredients aside from the fresh herbs

  3. Mix and marinate for around 10 minutes

  4. Skewer on to a couple of wooden or metal skewers (if using wooden, just soak quickly in some water under the tap because this prevents the wood from burning)

  5. Place onto a baking tray greased lightly with a bit of oil

  6. Bake for around 10-12 minutes

  7. Remove from the oven and top with the herbs and more spring onions and chilli if you have them!
