Creamy miso & tahini spaghetti with smoky breadcrumbs

If you love savoury, umami flavours, you’ll love this miso and tahini pasta. It’s salty, rich and creamy, and is another accidental dish I made when I was clearing my cupboards out! It’s kind of like a miso carbonara and if that doesn’t sell it, I don’t know what will!

The miso tahini sauce is really easy to whip up and both give a really good savoury kick.

Ingredients (serves 2):

  • 250g spaghetti

  • 2 tbsp white miso paste

  • 2 tbsp tahini (the runnier, the better)

  • 2 finely sliced garlic cloves

  • very generous glug of olive oil

  • 50g grated Italian hard cheese

  • 2 eggs

  • 1 slice of stale white bread

  • 1tsp smoked paprika

  • 1/2 tsp garlic powder

Method:

  1. Cook the spaghetti to packet instruction

  2. Lightly fry the garlic in a little olive oil and add to a large mixing bowl

  3. Add the cheese, miso paste, eggs and tahini to the garlic in the bowl and add a splash of pasta water to it to loosen the miso paste and whisk until smooth. Set aside

  4. While the pasta continues to cook, create your breadcrumbs by tearing up your slice of bread and whizzing up in a food processor until you get a fine crumb

  5. Add the breadcrumbs to the pan you cooked the garlic in and toast until crispy. Once toasted and slightly golden, add a touch of olive oil and continue to toast before adding in the garlic powder and smoked paprika. Remove from the heat once the breadcrumbs are crunchy and golden.

  6. Once the pasta is cooked, add it to the bowl with the miso in and mix until all of the pasta is coated in the creamy sauce

  7. Serve and top with the breadcrumbs
