Creamy vegetarian sausage gnocchi

Gnocchi doesn’t just have to be smothered in pesto or a rich tomato sauce! I love this creamy sausage gnocchi as a midweek meal for its speed, taste and low maintenance with it only requiring one pan. For something so creamy, it’s surprisingly low in calories as cream cheese is used in place of double/heavy cream.

To serve 2:

  • 4 vegetarian sausages

  • 500ml veggie stock

  • 1/2 white onion

  • 2 garlic cloves

  • 100g cream cheese

  • 500g gnocchi

  • 20g pecorino

  • 1 cup frozen peas

  • Salt and pepper to taste

Method:

  1. Finely slice the onion and add to a frying pan with olive oil. Cook for around 5 minutes on a medium heat.

  2. Once slightly golden, add the sausages to the pan by tearing them into small pieces as you go.

  3. Once the sausages have browned, remove both the onions and sausages from the pan and set aside on a plate.

  4. In the same frying pan, add the peeled and finely sliced garlic cloves with a little more olive oil and once fragrant, add the cream cheese and stock, stir and once combined, add the pecorino. Season.

  5. Add the gnocchi and leave to simmer in the creamy sauce for around 10 minutes on a low to medium heat.

  6. Add the peas. Add the onions and sausages back to the pan. Cook for a further 5 minutes and serve.
