Cauliflower steaks with cafe de Paris sauce
This is a great veggie Sunday roast idea or for impressing friends and family! My family absolutely loved this dish when I made it for them and it really is delicious so give it a go!
Ingredients (makes 4-5 steaks)
To make the cafe de Paris sauce:
2 tbsp butter
1/2 white onion finely chopped
1/2 veggie stock cube
50ml water
Pinch of dried basil
Pinch of dried thyme
Salt and pepper to taste
100ml double cream
About 1tbsp chopped fresh dill
To make the cauliflower steaks and rub:
2 large heads of cauliflower cut into steaks
1tbsp butter (room temp)
1tbsp oil
1tsp soy sauce
Pinch of dried thyme
Salt and pepper to taste
To make the chive oil:
Handful of fresh chives
50ml sunflower oil
Method:
Preheat the oven to 200 degrees c (fan)
Cut the heads of cauliflower into 4-5 equally sized steaks and steam for around 8 minutes (or until 80% cooked)
Make the cafe de Paris sauce by softening the finely chopped onion in the butter before adding the dried herbs, stock cube, water, cream, dill and salt and pepper. Leave to simmer on a low heat until thick and creamy.
Once the cauliflower is cooked, remove and place onto a baking tray lined with baking pepper (to keep the cauliflower from sticking to the tray and falling apart when removed.)
Make the rub by mixing the ingredients together and then brush it over the cauliflower steaks and place in the oven at 200 degrees c for 20 minutes.
Make the chive oil by blending the oil and chives together in a high speed blender until smooth and bright green. Pour into a bowl and leave to sit to allow the oil to separate slightly from the blitzed chives.
Place the steaks onto plates or a serving platter, top with the sauce and the chive oil and sprinkle over some extra dill.
