Crispy chicken wings with a honey, chilli & lime glaze
Crispy chicken is a wonderful thing but often comes with a lot of work in the way of deep frying or from a restaurant. This recipe proves that you can achieve audibly crispy wings at home with just an oven and no vats of oil in sight. The glaze is sticky, sweet, salty and a little sour and is so moreish! Hope you enjoy these.
Ingredients:
1kg chicken wings
1tbsp cornflour/cornstarch
1/2tsp salt
1/2tsp black pepper
Glaze:
3tbsp honey
Finely chopped red chilli (however much you like)
2tbsp light soy sauce
2 garlic cloves finely chopped or grated
Juice of 1/2 lime
Fresh chilli and spring onion/scallion for sprinkling over at the end and a charred 1/2 lime (just halve and place insides down in a hot pan until scorched).
Method:
Preheat the oven to medium 150c.
Toss the chicken wings in the cornflour, salt and pepper evenly and place on a baking tray, making sure the wings have space in between them. Bake for 20 minutes, flip the chicken wings and then increase the oven temperature to 220c and bake for a further 20 minutes, flipping them again half way through this final cooking time.
In a saucepan, bring together the glaze ingredients and simmer for 5 minutes on a medium heat. Toss the wings in this and tuck in!
