5 ingredient, 5 minute chilli oil

If you’re after a simple, quick and easy chilli oil you can whip up in 5 minutes, this is it!

You can use this liquid gold in dipping sauces, on ramen, in satay sauces, dizzled over veggies, hummus, spiced yogurts, noodles…the list is endless; you get the idea.

For enough to fill a small jar:

  • 1 cup vegetable oil

  • 1tbsp ground Sichuan peppercorns

  • 1/4 cup chilli flakes (I make mine by grinding dried red chillies to get a nice red colour but ordinary jarred chilli flakes are fine)

  • 4tbsp soy sauce

  • 2tsp sugar

Method:

  1. Mix the chilli, sugar, soy sauce and Sichuan peppercorns in a bowl

  2. Heat the oil in a pan (drop a couple of chilli flakes into the oil to see if it’s hot enough - if they sizzle, it’s ready)

  3. Pour the oil over the ingredients in a bowl or the jar, leave to sit for 5 minutes and then mix a little

I keep this in the fridge for about a week but it never usually lasts that long!
