Chipotle halloumi brunch tacos

I’m calling these brunch tacos but really, they’re great at any time of the day and are really easy and quick to put together.

‘Tortillas filled with chipotle beans, chipotle mayo, scrambled egg, halloumi, lettuce and lime’ is a bit of a mouthful so let’s just stick with ‘brunch tacos.’

Time to cook: 20 minutes

Ingredients (makes 4 tortillas):

  • 1 block halloumi

  • 1 can black beans

  • 2tbsp chipotle paste

  • 1 lime

  • 1 head lettuce

  • 4 eggs

  • 4 flour tortillas

  • 1/4 cup mayonnaise

Method:

  1. Cube and fry the halloumi until crispy and golden

  2. Mix 1tbsp of the chipotle paste with the mayonnaise and set to the side

  3. Fry up the black beans in a little oil along with the remaining chipotle paste

  4. Scramble the eggs, cook, and set to the side

  5. Load the tortillas with the various fillings, squeeze over some lime and wrap
